Key Responsibilities
* Organize the assigned kitchen section before each service period.
* Review production requirements and prepare ingredients according to expected business levels.
* Follow departmental operating procedures and hotel culinary standards.
* Prepare and present menu items using approved recipes, portions, and cooking methods.
* Confirm that flavour, texture, temperature, and appearance remain consistent.
* Arrange mise en place so that orders can be completed efficiently during busy service.
* Check ingredients for freshness and suitability before use.
* Store prepared food correctly and apply appropriate labelling and date controls.
* Monitor replenishment needs and communicate shortages without delay.
* Avoid overproduction while ensuring the section can meet confirmed demand.
* Assist in maintaining the culinary identity and presentation style of each hotel outlet.
* Coordinate preparation timings with other kitchen sections.
* Communicate clearly when an order requires special handling or dietary attention.
* Report equipment failures, ingredient concerns, and production delays to the supervising chef.
* Support colleagues when service pressure moves beyond one section.
* Complete reasonable assignments in another culinary area when business needs require assistance.
Kitchen hygiene and food safety form a central part of this position.
* Keep preparation surfaces, utensils, storage areas, and equipment clean throughout the shift.
* Apply HACCP controls during receiving, storage, preparation, cooking, cooling, and service.
* Follow applicable municipality food-safety and hygiene regulations.
* Work with the Hygiene Officer to implement corrective and preventive measures.
* Monitor food temperatures and maintain required records.
* Prevent cross-contamination by separating ingredients and using designated equipment correctly.

A suitable candidate will understand how to run a kitchen station independently while staying connected with the wider brigade. They should be able to reproduce established dishes accurately, maintain cleanliness during active service, and respond calmly when orders, priorities, or production requirements change.
