Role Summary
Voco™ Hotels, part of IHG Hotels & Resorts, is hiring a Chief Steward in Dubai. The role is responsible for leading the stewarding department, ensuring sanitation and hygiene standards, and supporting seamless food and beverage operations.

What You’ll Do
* Oversee daily operations of the stewarding department, including scheduling, staff management, and task allocation.
* Develop and enforce departmental policies and procedures to maintain hygiene, cleanliness, and safety standards.
* Train stewards in cleaning techniques, chemical handling, and equipment operation.
* Monitor and manage inventory of cleaning supplies, utensils, and equipment in coordination with procurement.
* Ensure cleanliness and sanitation in kitchens, dishwashing areas, storage rooms, and staff facilities.
* Conduct inspections, maintain sanitation records, and implement corrective measures when necessary.
* Supervise and maintain dishwashing machines, cleaning tools, and related equipment, ensuring timely maintenance.
* Collaborate with culinary, banquet, and other departments to support smooth operational flow.
* Ensure compliance with local health department regulations, food safety, and occupational safety standards.
* Train staff on handling hazardous materials, PPE usage, and emergency response procedures.
Ideal Profile
* High school diploma required; degree/diploma in Hospitality Management or Culinary Arts preferred.
* Food Safety & Hygiene certifications (e.g., HACCP, ServSafe) are required.
* Proven leadership and supervisory experience in stewarding or kitchen operations.
* Strong operational knowledge of sanitation, dishwashing processes, and chemical handling.
* Ability to control costs, minimize wastage, and manage breakage.
* Good communication skills in English; additional languages are an advantage.
* Physically fit with the stamina to perform operational tasks when needed.
* Experience in hotels, resorts, or large-scale restaurant operations.
