Role Context
The Demi Chef de Partie - Kitchen supports smooth food production by managing assigned station duties, controlling mise en place, monitoring food quality, reducing wastage, and ensuring dishes are prepared and presented according to hotel standards. The position works closely with the Executive Chef, Executive Sous Chef, outlet supervisors, and the kitchen brigade to deliver consistent dining experiences, support promotions and events, and maintain safe, clean, and efficient culinary operations.
Key Responsibilities
* Prepare and maintain the inventory list for the assigned kitchen station.
* Support other kitchen stations when required by applying broad culinary knowledge and flexible station coverage.
* Follow standard recipes, portion standards, plating guides, and outlet presentation requirements at all times.
* Provide the Executive Sous Chef with daily market list requirements for the assigned outlet.
* Personally check goods received for the outlet to confirm quality, quantity, freshness, and suitability for production.
* Prepare recipes and costing details when requested by the Executive Sous Chef.
* Assist the Executive Sous Chef and Executive Chef with special food promotions, events, themed menus, and other food-related activities.
* Communicate daily with outlet supervisors to ensure food items sent to outlets are clearly explained and properly presented.
* Control food wastage while maintaining food quality, consistency, and guest satisfaction.
* Recommend practical improvements to systems and procedures that can increase kitchen efficiency and improve service standards.
* Maintain required records, documentation, and operational control files for the assigned kitchen area.
* Use logbooks and approved communication methods to support clear handover and smooth intradepartmental coordination.
* Work according to operational standards, hotel procedures, grooming rules, and kitchen discipline.
* Attend scheduled training classes, briefings, communication meetings, and department updates.
* Show full cooperation and respect within the kitchen team and across other hotel departments.
* Maintain awareness of daily hotel activities and product knowledge of hotel facilities.
* Check buffet quantity, food quality, and food labels before guest arrival and throughout service.
* Ensure buffet items are refilled on time and displayed according to hotel standards.
* Inspect kitchen equipment at the end of the shift to ensure it is clean, working properly, stored correctly, and free from hazards.
* Communicate all important shift information to the next team or supervisor for smooth continuation of operations.
* Share culinary skills and practical knowledge with colleagues to support team development.
* Apply HACCP standards and hotel food safety requirements during preparation, storage, service, and cleaning.
* Assist guests by explaining dishes, recommending food specialties, and promoting available food offers when required.
* Check the standard and quality of food before it leaves the kitchen.
* Maintain punctuality, grooming, cleanliness, professionalism, and a positive attitude during duty.
* Support colleagues and other hotel areas when business needs or guest service requirements demand flexibility.
* Carry out other reasonable duties assigned by the culinary leadership team.
Ideal Profile
* Diploma or degree in vocational hospitality, culinary arts, food production, or a related field.
* 1-2 years of culinary experience in a 4-5 star hotel, resort, restaurant, or similar food production environment.
* Good understanding of food and beverage production operational standards, kitchen policies, and hotel procedures.
* Full compliance with HACCP standards and food safety certification requirements.
* Practical knowledge of mise en place, buffet setup, food preparation, plating, stock control, and kitchen hygiene.
* Ability to follow standard recipes and maintain consistent food quality under busy service conditions.
* Flexible enough to support different kitchen stations when needed.
* Good communication skills for working with chefs, outlet supervisors, service teams, and other hotel departments.
* Strong attention to cleanliness, grooming, punctuality, documentation, and safe equipment handling.
* Positive team attitude with the ability to create a calm and cooperative working environment in the kitchen.
