Job Overview
As Executive Sous Chef, you will support the Executive Chef in directing daily kitchen operations, overseeing multiple restaurants, events, and in-room dining services. You’ll contribute to innovation in culinary offerings while ensuring food quality, hygiene, and team development meet the highest standards expected in a luxury resort environment.
Key Responsibilities
* Lead kitchen teams across various outlets, ensuring high-quality food production and efficient operations
* Collaborate with the Executive Chef on menu design, recipe development, and seasonal updates
* Monitor food presentation, hygiene, and cooking techniques to guarantee consistency and guest satisfaction
* Train, mentor, and supervise junior chefs and kitchen staff to uphold performance standards
* Manage kitchen resources and scheduling to optimize productivity and minimize waste
* Enforce food safety standards in compliance with local regulations and internal policies
* Support event catering, private dining, and large banqueting operations with precision and creativity
Governance & Standards
* Promote a safety-first culture, upholding HACCP and fire safety procedures
* Document and maintain SOPs for food handling, storage, and preparation
* Assist in vendor evaluations and quality control of ingredients and equipment
Job Requirements
* 10+ years of international culinary experience in 5-star hotel kitchens, with at least 5 years in a senior or leadership role
* Proven experience in managing large, multi-outlet operations
* Formal culinary education (diploma or degree in culinary arts) from a recognized institution
* Versatility in cooking styles and cuisines (Mediterranean, Middle Eastern, Asian, etc.)
* Excellent leadership, communication, and team development skills
* Proficient in menu costing, kitchen budgeting, and inventory control
