Role Context
The Pastry Chef supports the hotel\'s culinary operation by producing breads, pastries, desserts, doughs, fillings, and decorated baked products according to established quality and presentation standards. The position requires close attention to recipes, production sheets, proofing times, baking temperatures, portion control, hygiene, and food safety documentation.
Beyond daily production, the role contributes to efficient ingredient usage, communicates surplus items to the Chef for menu planning, supports kitchen colleagues, and helps maintain dependable standards throughout each shift. Consistent execution directly affects product quality, guest satisfaction, food cost control, and the overall performance of the pastry and bakery operation.
Key Responsibilities
* Prepare breads, pastries, doughs, fillings, desserts, and other baked products according to approved recipes and production requirements.
* Review daily production sheets to determine the quantity and variety of bakery and pastry items required.
* Measure, mix, shape, proof, bake, finish, and decorate products using appropriate pastry techniques.
* Follow established recipes, preparation checklists, portion specifications, and presentation standards.
* Operate baking ovens, mixers, measuring equipment, utensils, and pastry appliances safely and correctly.
* Monitor proofing, baking, cooling, and storage conditions to maintain product consistency.
* Check appliance and food temperatures throughout the shift and report irregularities to management.
* Inspect finished products for texture, flavor, appearance, portion size, freshness, and presentation.
* Maintain kitchen food safety logs and complete required records accurately.
* Follow food handling, sanitation, hygiene, storage, and contamination prevention procedures.
* Inform the Chef about excess food products so ingredients can be incorporated into daily specials or future production planning.
* Monitor food quantities and portions during service to help maintain consistency and reduce unnecessary waste.
* Keep pastry workstations, tools, equipment, and preparation areas clean, organized, and ready for production.
* Assist culinary colleagues with preparation and kitchen tasks during demanding service periods.
* Support management with employee training, scheduling, coaching, evaluation, counseling, and performance-related activities when required.
* Act as a positive role model for culinary colleagues and help reinforce professional kitchen standards.
* Communicate clearly and professionally with team members, supervisors, and other hotel departments.
* Handle workplace matters with discretion, professionalism, respect, and appropriate confidentiality.
* Follow hotel safety and security procedures and promptly report accidents, injuries, hazards, or unsafe working conditions.
* Protect company property, kitchen equipment, tools, ingredients, and confidential information.
* Maintain professional grooming, uniform, and workplace conduct standards.
* Perform physically active duties including extended standing, walking, bending, reaching, lifting, carrying, pushing, and pulling within established safety limits.
* Complete additional reasonable culinary duties assigned by supervisors.
Ideal Profile
A technical, trade, or vocational school qualification in Culinary Arts, Baking, Pastry, Food Production, or a related discipline is preferred.
Candidates should have at least 2 years of relevant professional experience in pastry, bakery, hotel culinary operations, restaurant kitchens, or a comparable food production environment.
Practical knowledge of dough preparation, proofing, baking methods, fillings, pastry finishing, decorating, recipe execution, food safety, temperature control, and portion consistency is important.
The successful candidate should be comfortable working with detailed production schedules while maintaining accuracy during high-volume kitchen periods. Strong organization, dependable time management, attention to presentation, and the ability to work cooperatively with other culinary professionals are essential.
Previous supervisory experience is not required.
