Role Context
This position takes operational responsibility for the restaurant kitchen,
Key Responsibilities
* Direct restaurant kitchen shifts and coordinate cooks and food preparation teams to maintain efficient service throughout daily operations.
* Personally prepare and cook menu items when required, ensuring recipes, presentation, portioning, flavor, and quality specifications are consistently achieved.
* Monitor raw ingredients and finished dishes, rejecting products that do not meet established quality standards.
* Plan daily production quantities according to expected restaurant demand, special functions, reservations, and operational requirements.
* Support the creation of daily and seasonal menu items while contributing new culinary concepts, applications, and presentation ideas.
* Maintain correct food preparation, handling, temperature control, labeling, storage, and sanitation procedures.
* Determine plating requirements and develop attractive food presentations that reinforce the restaurant\'s dining standards.
* Communicate production requirements clearly to culinary personnel and coordinate resources before and during service periods.
* Manage day-to-day kitchen staffing and maintain sufficient knowledge of team positions to provide operational coverage when required.
* Cross-train kitchen employees so the restaurant can respond effectively to changing volumes and staffing requirements.
* Establish performance, productivity, budget, and team objectives while organizing kitchen priorities around business demand.
* Monitor the financial impact of kitchen activities and make practical operating decisions that support budgeted property targets.
* Apply workplace safety requirements, investigate employee accidents appropriately, and follow established reporting procedures.
* Maintain a strong guest focus by responding to food quality concerns, reviewing feedback, and taking corrective action when necessary.
* Coach culinary employees on ingredients, preparation methods, menu characteristics, production techniques, and service expectations.
* Identify development needs within the kitchen team and use practical training, mentoring, and performance feedback to improve capability.
* Participate in employee appraisals, progressive discipline procedures, interviews, and selection of suitably skilled kitchen personnel.
* Attend operational meetings, evaluate kitchen performance information, and resolve production or service issues using sound judgment.
Ideal Profile
Candidates may qualify with a high school diploma or GED combined with at least four years of professional experience in culinary operations, food and beverage, or a closely related environment.
Alternatively, applicants with a two-year qualification from an accredited institution in Culinary Arts, Hotel and Restaurant Management, or a related discipline should bring at least two years of relevant professional experience.
The position suits a hands-on culinary leader who understands restaurant production from preparation through final presentation and can lead a busy kitchen without losing attention to food quality. Strong knowledge of sanitation, food storage, temperature controls, kitchen safety, menu execution, portion management, and production planning is important.
