Position Overview
Atlantis Resorts is hiring a Sommelier in Dubai, UAE to deliver specialist wine service at Carbone within Atlantis The Royal. Working closely with the Bar Manager and Wine Manager, the role combines wine pairing, personalized guest recommendations, cellar and stock management, wine list development and beverage upselling within a luxury fine dining environment.

About the Role
As Sommelier at Carbone, you will bring expert wine knowledge into the guest dining experience, recommending selections that complement the restaurant\'s dishes while considering individual preferences.
You will also support the
commercial and operational management of the wine offering, working with the Bar Manager and Wine Manager to maintain an appropriate selection and ensure wines are stored, presented and served correctly.
Wine Service and Guest Experience
* Recommend wines according to guest preferences and menu selections.
* Apply wine pairing knowledge to enhance the dining experience.
* Provide attentive and knowledgeable guidance throughout wine service.
* Serve wines at the appropriate temperature.
* Select suitable glassware for each wine.
* Recognize opportunities to recommend and upsell beverages naturally.
* Maintain the service standards expected within a luxury fine dining restaurant.
Wine List and Stock Management
* Work with the Bar Manager and Wine Manager on wine list updates.
* Assist with wine ordering according to operational requirements.
* Rotate wine inventory appropriately.
* Help maintain accurate and well-organized wine stock.
* Contribute practical wine knowledge when developing and maintaining the restaurant\'s selection.
Team Contribution
The Sommelier works as part of Carbone\'s Food and Beverage team and should be comfortable sharing specialist knowledge with colleagues.
Previous experience training restaurant staff on wines and wine service is preferred, helping the wider team develop confidence in recommendations, pairings and product knowledge.
About You
Candidates should have a strong background in luxury restaurants or hotels and at least two years of experience working at a comparable level.
A Level 2 qualification from the Wine and Spirit Education Trust, WSET, is required.
International experience in a similar position is an advantage, particularly within Italian fine dining venues. Experience preparing wine lists, maintaining wine inventory and training colleagues is also preferred.
You should combine strong wine knowledge with an intuitive understanding of guest preferences, polished service skills and the ability to identify appropriate beverage sales opportunities without compromising the dining experience.
