Job Overview

As a Sous Chef, you will support the Executive Chef in ensuring exceptional quality, service standards, kitchen hygiene, and team performance across all hotel food outlets. The role is integral to maintaining food quality, menu innovation, and ensuring HACCP and safety compliance. You will coordinate across departments, assist in training kitchen staff, and maintain profitability and performance KPIs across the culinary operation.

What You’ll Do

* Assist in managing the day-to-day operations of all kitchens, ensuring optimal performance and guest satisfaction
* Support the Executive Chef in controlling food costs, inventory, portioning, and presentation standards
* Supervise food production, preparation, and plating with high attention to quality and consistency
* Collaborate with outlet managers, engineering, and stewarding teams to ensure smooth operations
* Contribute to menu planning, recipe creation, and food merchandising strategies based on market trends
* Ensure compliance with hygiene, sanitation, fire safety, and food safety standards, including HACCP
* Train, mentor, and appraise kitchen staff to maintain performance, discipline, and morale
* Coordinate staffing and rosters to reduce overtime while ensuring sufficient coverage
* Respond effectively to guest feedback and kitchen-related concerns

Ideal Profile

* 7 to 10 years post-apprenticeship experience in large-scale kitchen environments or upscale hotel kitchens
* Background in 4 or 5 star hotels, with a strong record of supervising teams and managing kitchen workflows
* Solid knowledge of ordering systems, stock management, and food cost control
* Proven ability to lead by example and build team engagement
* HACCP certification and experience enforcing food safety protocols
* Strong interpersonal, communication, and coordination skills
* Ability to handle high-pressure service periods with professionalism and consistency
