Job Overview
As Sous Chef - Sushi at Kayto in Jumeirah Al Naseem, you will oversee the preparation and execution of sushi dishes to the highest culinary standards. You will manage kitchen operations, support menu development, and train staff while maintaining hygiene, cost control, and consistency in food quality. This is a leadership role for a chef passionate about modern Japanese cuisine and luxury hospitality.

Key Responsibilities

* Prepare premium-quality sushi and Japanese dishes as per menu specifications
* Lead sushi section operations, ensuring consistency and precision during service
* Assist in seasonal menu creation and development of innovative sushi offerings
* Supervise and train junior chefs while ensuring compliance with kitchen standards
* Maintain HACCP hygiene protocols and oversee cleaning, storage, and waste practices
* Support budget management, food cost control, and efficiency improvements
* Ensure all kitchen records, safety procedures, and presentation standards are upheld

Job Requirements

* Degree or diploma in Culinary Arts from an accredited culinary school
* Minimum 2 years as Sous Chef specializing in sushi in a 5-star luxury hotel or fine-dining restaurant
* Deep knowledge of Japanese culinary techniques, ingredients, and presentation
* Strong communication skills in English; additional international language is a plus
* Previous experience in the UAE hospitality market is desirable
